Brot Reportage: Help!

HI to everybody! I need your help! :-D

I am a free lance journalist for an Italian newspaper: Il Panificatore Italiano (the Italian Baker) and I would like to have some info about the situation in Austria. I am much interested in having info about your job, the nice and positive aspects, the negative ones (burocracy e.g.) and how your vocation starts, why you decided to become baker. If you like to answer, here are some questions, feel free to answer to them (both or some of them) in German (although I can not write, I can read German). If you answer, please send me a picture (300 dpi). As soon as the reportage will be published, I'll send a copy to you. If you like, I can also phone you, if you don't have time to write me back.

1) Welches sind die am weitesten verbreiteten Brotsorten in Ihrem Land? Stellen sie größtenteils industrielles Brot oder Handwerkbrot her? Gibt es irgendein Brot, daß für Ihre Gegend typisch ist?

2) Ist es Ihrer Meinung nach notwendig, Brot ein qualitatives Markensiegel zu verleihen, um traditionelle Produkte gewerblich zu schützen?

3) Benutzen die Handwerksbäcker traditionelle Methoden oder sind sie offen gegenüber neuen Verfahren wie z. B. der Gebrauch von Schockkuehler? Was benutzen Sie persönlich größtenteils?

4) Haben Sie während der letzten Jahre eine Zunahme/Abnahme/Stabilisierung des Brotumsatzes wahrgenommen? Woran könnte dies Ihrer Meinung nach liegen?

5) Welches sind die gewichtigsten Probleme, denen Bäcker gegenüberstehen (etwa Schwarzarbeit, Nachtarbeit, Verdrängung kleinerer Betriebe durch große Ketten, Auftragsmangel) und welche Lösungsansätze gibt es dazu?

6) Brot und Kohlenhydrate waren in den letzten Jahren oft Gegenstand kontroverser Diskussionen um Diäten und Fettleibigkeitsprobleme. Wie denken Sie darüber?

7) Ist in Deutschland Brot als ein wesentlicher Teil einer Mahlzeit anzusehen oder nur als Beilage zu verstehen?

8) Wie sehen Sie die Zukunft des Bäckereigewerbes?

It sounds like your interest is just for the situation in Austria. You are mentioning Germany in your questions as well?! Please advice.
I am a German master baker, living in Canada. Do you have any interest in the Canadian or north American situation?

The reportage will be about the "German speaking countries", that's why I am mentioning Germany in the questions. Of course, the two countries are different in their handcraft traditions and in the reportage this aspect will be enlighted. Sorry if it seemed that I mixed up Germany and Austria.
I would be very happy to have your opinion and to know how you decided to become a master baker, migrating from Germany to Canada and -suppose- creating a nice integration between your German baker-traditions and the Canadian market.
